(Eng sub & Tiếng Việt) I was so amazed when I tasted this bread. The cocoa powder not just gives flavour to the bread but also weakens gluten and enhance moisture inside, which makes the texture of the bread more tender and soft. If you like rich, soft bread, you definitely should try this.
Ingredients
290 gram bread flour
15 gram cocoa powder
70 gram icing sugar (superfine sugar is also fine)
½ tsp salt
2 tsp (6 gram) instant yeast
75 gram warm milk
15 gram bột cafe hòa tan
75 gram whipping cream
75 gram eggs (lightly beat 2 eggs, get 75 gram and save the rest for egg wash)
½ tso vanilla extract
50 gram unsalted butter, very soft but not melted
50 gram chocochip (optional)
30 gram sliced almonds
