The plantains are of a specific group of banana, the East African Highland bananas and are locally known as matoke. They are considered a super food. They have more than twenty times the amount of vitamin A, about three times vitamin C, double the magnesium, and almost twice the potassium as the common banana. It is a variety of starchy banana, commonly referred to as cooking bananas. The fruit is harvested green and then cooked and often mashed or pounded into a meal. It can also be steam-cooked. The mashed meal is one of the dishes enjoyed by many African countries. It’s a dish that by its taste and texture is amazingly comforting and rich; a glossy warming, brilliant mash which absorbs any flavours thrown its way.
