Diwali celebrations are incomplete without ladoo. Rava khobaryache ladoo are prepared using roasted rava / sooji, coconut and dry fruits. They melt in the mouth are taste yumm. Eating these ladoo is such a delight the hardly anyone can resist. This is a traditional recipe. Enjoy rava khobaryache ladoo.
Ingredients:
• 1 cup fine Rava / Sooji
• 1/2 cup shredded fresh Coconut
• Ghee
• Finely chopped dry fruits (Almonds, cashew nuts)
• 3/4 cup Sugar
• 1/2 cup less 2-3 spoons Water
• 1/2 tsp Cardamom powder
• Raisins for garnishing
Method:
• Roast rava adding 1 tsp ghee for just about 4-5 minutes. Don’t
roast for longer time.
• Take rava in a bowl. Add shredded fresh coconut and mix well.
Cover and give it a standing time of 30 minutes.
• Heat ghee in a pan. When ghee melts add mixture of rava and
coconut. Mix well.
• Roast the mixture on low heat for about 7-8 minutes. Roast
the mixture as we roast rava for sheera.
• Rava should not change its color. When we roast rava with
ghee it smell awesome.
• Turn off the heat. Add dry fruits. Pour out the mixture into a
dish.
• Until the mixture cools down, let’s prepare sugar syrup.
• Heat a pan. Add sugar and water. Stir until sugar dissolves.
• Bring sugar syrup to boil. Reduce the heat to medium.
• Let’s prepare single threaded sugar syrup. Cook the syrup for
7-8 minutes.
• Let’s check. When the mixture gets single thread consistency,
turn off the heat.
• Add the mixture of rava and coconut to the sugar syrup.
• Add cardamom powder and mix well.
• Cover and give it a standing time of 30-45 minutes so that the
sugar syrup will be absorbed in the rava coconut mixture.
• Let’s check. The syrup is well absorbed in the rava coconut
mixture.
• Let’s roll the mixture into ladoo shape. Take some mixture and
roll it into round ladoo.
• Garnish with raisin and roll again.
• Rava khobaryache ladoo are already.
